I don’t know if I already mentioned it to you but I LOVE chickpeas 😍 Cooked in any kind of way actually: hummus, soup, ecc.
Indeed, I’ve already posted this recipe where chickpeas are the main ingredient but, since with this hot weather turning on the oven is my last thought, I have tried to use them in a more fresh and summery version, and I actually liked it very much, I hope you’ll like it too!
250 gr chickpeas (already cooked)
2 zucchini (already sliced and grilled)
10/12 cherry tomatoes cutten into half
40 gr quinoa (previously cooked)
The longest part is actually cooking all the ingredients, it’s not difficult but takes a while. Once all the ingredients (except the cherry tomatoes) are cooked the procedure is reeaally easy: Cut into little pieces the slices of grilled zucchini and put them in a bowl. Add the cherry tomatoes and chickpeas, then mix everything with a spoons of oil, salt and pepper. (I served the quinoa a side of this mix but if you want you can add it already with all the other ingredients 🙂 ) Leave everything in the fridge till 10-15 min before eating and then enjoyyy!
Little Tip: I didn’t have it this time but if I would, I would have added some fresh basil, it just make everything more tasty and fresh! 😉
